What you need:

  • 1 cup cottage cheese

  • 10 large eggs

  • 1/2 cup grated parmesan cheese

  • 1 cup spinach, chopped

  • 1/2 cup cooked bacon, chopped

  • Salt & pepper

  • Cooking spray

How you make:

  1. Preheat oven to 350°F and grease a muffin tin.

  2. Blend eggs, cottage cheese, salt and pepper until smooth.

  3. Stir in cooked bacon, spinach, and parmesan.

  4. Pour mixture into muffin cups.

  5. Bake 20–25 minutes until set.

Protein French Toast Casserole

Make ahead, crowd-friendly

What you need:

  • 1 loaf Hero sliced bread, cubed

  • 1/2 cup blueberries

  • 1/2 cup strawberries

  • 1/2 cup raspberries

  • 2 1/2 cup egg whites

  • 1 1/4 cup milk

  • 1/3 cup syrup

  • 2 tbsp lemon juice

  • 2 tsp vanilla extract

  • 1 tsp cinnamon

  • 1 scoop vanilla protein powder

How you make:

  1. Preheat oven to 350°F.

  2. Spread cubed bread on a sheet pan and bake for 10 minutes, stirring halfway through.

  3. Spray a 9x13-inch casserole dish and add toasted bread. Sprinkle berries evenly on top.

  4. Add remaining ingredients to a blender and blend briefly until smooth. Do not over-mix.

  5. Pour mixture over bread and berries, pressing gently so everything is coated.

  6. Bake immediately for 45–50 minutes, or cover and refrigerate overnight and bake in the morning.

Let cool slightly before serving. Add maple syrup and enjoy!

What you need:

  • Greek yogurt

  • Zen basil seeds or chia seeds

  • Berries

  • Granola

How you make:

  1. Stir seeds into Greek yogurt.

  2. Layer yogurt, berries, and granola into jars or containers.

  3. Cover and refrigerate overnight.
